Cucurbita maxima 'Crown Prince'

Cucurbita maxima, one of at least five species of cultivated squash, is one of the most diverse domesticated species, perhaps with more cultivated forms than any other crop. This species originated in South America from the wild C. maxima ssp. andreana over 4000 years ago .Grey-skinned variety with bright orange flesh, that contrasts extremely well. Excellent culinary variety weighing on average 3- 4kg. Sweet, rich, nutty flavour, and the fruits are round and flat in shape. This is a mid to late season variety of good flavour. The outer skin is a most attractive shade of blue. A good exhibition variety when shown cut open with its rich orange flesh.

Crown Prince is very good source of vitamin A and C, potassium, dietary fiber, and manganese. Also is a good source of folate, omega-3 fatty acids, thiamin, copper, vitamin B5, vitamin B6, niacin and copper.

Crown Prince is best cut into 5cm (2") thick slices, using a heavy, large-bladed kitchen knife, before cooking. You can bake, roast or casserole it, or just dice and sauté in butter with black pepper.
